Organic Box 24th November 2010

fruit: bananas, pears, Russet apples, plums, oranges
veg: carrots, red onions, Nicola potatoes, Romanesco cauliflower, rainbow chard, butternut squash, sprout tops, lettuce

It’s absolutely freezing this week, so stodge is definitely in order.  Floret pasta bake and Nepalese Vegetable curry are already chalked up for weekday suppers.

We have been stirring the apples and bananas into Banana & Apple porridge, and debating what to do with the sprout tops.  I currently favour them stir-fried with some hazlenuts and a little blue cheese, but the kids want to make them into soup.  We shall see who wins..

veg: organic stir fry bag, oriental salad, green pepper, leeks, onions, carrots, parsnip, jerusalem artichokes, Cosmos potatoes

Jerusalem artichokes make a great combination with smokey bacon and this soup is a good way of using them if you are a bit unsure of the knobbly little fellas.

I’m going to use my stir fry bag with some noodles, and will probably team them with some salmon like this.  The green pepper, onions, potatoes and carrots will be used in a hale and hearty harvest vegetable soup.

Finally, I think it’s about time to start cooking the pears as there are so many, so we’ll probably kick off the season with a round of poached pears with ice cream and chocolate sauce.

Mashed Potato Soup

Raw Potato
1 or two mugs of left over mashed potato
1 pint chicken stock (from cube is fine)

Put the mashed potato into a saucepan and gradually add the chicken stock, stirring well to make sure the mash is broken up.  When you have reached a thick, creamy consistency, stop adding stock.

Bring the soup to boil and then season to taste.  You can add a little fried garlic if you like, or a couple of handfuls of grated cheese.  I prefer this soup plain and simple, with just some black pepper on top.

I’ve made some lovely soups this week, including Beef, Leek & Lentil using the cherry tomatoes.  My other favourite is Mashed Potato Soup

It’s one of those recipes born of needing a warming soup at lunchtime and having nothing other than a box of mashed potato in the fridge.  Well, let me tell you, that is as fine a base for a soup as any I’ve used, so definitely give it a go!

The mango made a delicious smoothie, blizted with some lime juice, the squeezed oranges and a bendy banana.  Yummy.
