Sprout & Stilton Soup

Slice of StiltonSprouts

1 clove garlic
1 onion
1 stalk celery
1 tbsp olive oil
300g sprouts
1 pint veg stock
100g Stilton or similar blue cheese

Mince garlic, finely chop onion and celery.  Fry in oil gently for a few minutes, then add cleaned, halved sprouts and stock.  Ensure stock covers veg.  Simmer for around 20 minutes. 

Crumble in Stilton and stir for a couple of minutes.  Blend.  Check seasoning.  Serve with fresh, crusty baguette.

Organic Box 3rd February 2010

veg: kale, Batavia lettuce, brussel sprouts, aubergine, red onions, Desiree potatoes, carrots, beetroot

Lovely to see some lettuce in the box this week.  Definitely time for our first Salade paysanne of the year.  We’ll also be making some brussel sprout and Stilton soup, which is a curiously perfect paring, and a potato gratin to go with our Monday Steak (a very good reason to go and buy some Gruyere).

More baked spuds this week with carrot and apple salad, and beetroot and feta salad.  I’ll also probably make some baba ganoush with the aubergine, since it is quick and makes a great snack.  And I love making a mess with the aubergine over the gas flame!
